Pokemon Birthday Party

I love to plan birthday parties and get tons of my inspiration through Pinterest!  My son was big into trading Pokemon cards last year and decided that is what he would like for his 8th birthday party!  He invited a “few” of his friends and we “I” was super surprised when every single one of them was able to make it!  Oh my…we may make it a little lower key this year!  It was a great time and they were a super group of kids and a great party over all!  Here comes the fun…

These personalized Pokemon invites turned out SO cute I decided to personalize one for each kiddo and attach it to their goodie bag to take home!  I found a website that you fill out a little form and up pops your child’s very own Pokemon card…super cute!  If I had a laminator I could of put these together myself, since I didn’t I sent them to be printed at the local printing shop and had them laminate the front and back together so it looked like an actual card!!  I got so many compliments on these and lots of calls from moms afterwards asking if they could steal my idea for their kiddos party!!! 

I can’t find the invite I made for the kids, it was a lot more detailed then the family one!

Cookie Monster Cupcakes

I don’t really have a recipe for these…I had a friend see these online and send me a picture of them!  I had everything on hand (including a box of cake mix) so the kiddos and I decided to whip some up!!!  

They turned out super cute and would be adorable for a Sesame Street themed birthday party!!!

We used:

  • 1 Box cake mix (you pick the flavor)
  • Blue frosting (mine was store bought but you could make homemade and use blue food coloring)
  • Large marshmallows
  • Chocolate Chips
  • Cookies

Bake cupcakes as directed on the box, cool.  Cut the ends off of the large marshmallow and place them on the cupcake.  I put a dab of the frosting on the back of the chocolate chips as glue to attach them to the large marshmallow eyes.  I took a knife and made a small slit, cut a cookie in half and stuck the cookie half in the slit.  I pipped the blue frosting around the eyes and cookie to cover the cupcake…that’s it!  You could also spread the frosting on first with a knife if you don’t want to pipe it on, then place the eyes and cookie in after it’s frosted!

Super easy, Super cute!  Enjoy!!

Cinnamon French Toast

Cinnamon French Toast Pic I have to admit…this was ALL my husbands doing!  I usually let him take over the kitchen for breakfast on the weekends (and believe me, I don’t put up a fight)!  We had some cinnamon french toast when we were in Chicago for our 10 year wedding anniversary and he decided he needed re-create it!  I must say…he did a superb job!  

He even lighted the recipe a bit by using only 1 whole egg and 2 egg whites and light syrup! The sausage is turkey..we had in the refrigerator and he made into patty’s…I didn’t include it in the recipe! 🙂

Cinnamon French Toast

Ingredients

  • 1 egg
  • 2 egg whites
  • 1/4 cup milk
  • 1/4 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • dash nutmeg
  • 8 slices French bread, sliced on diagonal

Instructions

  1. In a shallow bowl, whisk egg and egg white until foamy. Whisk in milk, vanilla, cinnamon, and nutmeg.
  2. Have warming drawer heated or heat oven to 200°.
  3. Heat butter in heavy skillet over medium-low heat. Dip 4 slices of bread in the egg mixture, turning to coat thoroughly. Let excess drip back into bowl.
  4. Place coated bread slices in hot skillet. Cook, turning, until both sides are nicely browned, about 2 minutes each side.
  5. Transfer to a warm plate and keep warm in oven. Repeat with remaining bread and egg mixture. To serve, sprinkle with cinnamon sugar, if desired. Serve with maple syrup (Light if watching your calorie intake)! Enjoy!

Mozzarella Dip

Motzarella Dip Perfect dip for any occasion!!!  This is my sissy Amy’s recipe (she got my mom’s awesome cooking ability…no recipes needed, just a pinch of this and a pinch of that)! She made this for Father’s Day this year and everyone raved about it so I decided to make it for a little get together we were having with some high school friends! They all loved it and asked for the recipe…my friend then made it for her camp out the next night!  She emailed me that all her friends loved it and she is making it again today for the 4th of July!  It really is that good!  It goes awesome with chips, crackers & veggies…everyone will love something in that group right!  Enjoy!!!

Mozzarella Dip

Ingredients

  • 2 cups mayonnaise (Hellman's is my favorite)
  • 1 cup sour cream
  • 1 cup mozzarella cheese
  • 1 tbsp parsley flakes
  • 1 tsp garlic powder
  • 1 tsp accent
  • salt and pepper to taste

Instructions

  1. Mix and refrigerate until cold. Serve with chips, crackers, vegetables...it's good with everything! Enjoy!
