Skinny Chocolate Chip Muffins So I found out from my neighbor that my daughter Loves banana muffins!  How I found out..my neighbor texted me one night wanting to know if my daughter ate her dinner that evening? She continued to tell me that she had made some banana muffins and my daughter consumed approximately…107 of them!  lol  First off…my daughter does not eat fruit!  No idea why…she loves her veggies (which is odd for a 5 year old) but she will eat carrots and raw spinach like it’s going out of style.  What a perfect way to sneak in some fruit!  I added some yummy mini chocolate chips (to tantalize my other kiddos to eat them…I have super Picky kids)!  I also healthified the recipe a bit for those of you (like me) watching your waste line!  These are perfect for breakfast or quick snack on the go…awesome with a hot cup of coffee or cold glass of milk!  Even better…they freeze well, for those of you with portion control issues (again, like me)! 🙂  Enjoy!

Ingredients

  • 2 Tbsp honey
  • 1/4 cup sugar or agave nectar (sweetner)
  • 1 large egg
  • 1 tsp vanilla extract
  • 3 large bananas, mashed
  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp kosher salt
  • 6 oz Vanilla Greek Yogurt
  • 1/2 cup mini semi-sweet chocolate morsels

Instructions

  1. In a large mixing bowl, beat honey, sugar or agave nectar, egg, vanilla and banana until blended. Add flours, baking powder, baking soda, salt, and yogurt. Beat for 1-2 minutes until fully combined. Fold in chocolate morsels.
  2. Grease cupcake tin with nonstick baking spray. Spoon batter into each tin (about 1/4 cup). Bake in a 350 degree F oven for 18-20 minutes. For mini muffins, bake 11-13 minutes (Makes approx. 36 mini muffins). Remove and cool on wire rack. Store in an airtight container for up to 5 days or freeze for later use. ENJOY.

Refrigerator Brownie Cake

I made this recipe for an annual get together we have each year with a group of awesome friends right before Christmas.  I was asked to bring the dessert and I always want to come up with something new…and something adults and kids will both like!  This did the trick…everyone loved it!  And even better…since it was cold outside I didn’t have to take up space in the refrigerator!  Once we got to our friends house we just put it out on the deck until it was time to eat!  It’s super easy to whip up and got ate up in no time!

Ingredients

  • 2 brownie mixes
  • 1 extra large egg
  • 1 (8 oz.) package cream cheese, softened
  • 1 cup powdered sugar
  • 2 (8 oz.) containers whipped topping
  • 1 (3 oz.) package instant chocolate pudding
  • 1 (3 oz.) package instant vanilla pudding
  • 3 1/2 cups milk
  • 1 Hershey candy bar or chocolate syrup (I also added some Heath English Toffee Bits)!

Instructions

  1. Mix brownie mixes according to directions. Add egg. Bake in 9x13 inch greased and floured cake pan. Mix cream cheese, powdered sugar and 1 container whipped topping. Put this mix on top of the cooled brownies. Blend puddings and milk together and put on top of the cream cheese mixture. Top with another layer of whipped topping. Put chocolate shavings or chocolate syrup on top. Refrigerate until ready to serve.

Oreo M&M dream Bars If you are an Oreo & M&M lover (Like my family) then these dream bars will be right up your alley. There’s tons of crunchy chopped Oreos and M&M’s, contrasted with soft, buttery, moist dough. The bars come together in one bowl and are ready in under a half hour – great when you need a dessert in a hurry.  If you have an overstuffed pantry like mine…this is the perfect recipe to help you out in that department.  You can substitute whatever you have in your cupboards and they always come out perfect and tasting great!!!!  The recipe calls for an 8×8 pan but I used my Pampered Chef brownie pan this time…that is why mine are in perfect little squares! 🙂  Enjoy!!!

Ingredients

  • 1/2 cup unsalted butter (1 stick), melted
  • 1 large egg
  • 1 cup light brown sugar, packed
  • 1 tablespoon vanilla extract
  • 1 cup all-purpose flour
  • 18 Oreo Cookies, coarsely chopped (You could also use Oreo Chocolate Birthday Cake Sandwich Cookies; or another type of chocolate sandwich cookie may substituted, or try about 2 heaping cups of coarsely chopped add-ins including leftover cookies, graham crackers, chocolate-covered pretzels, etc.)
  • about 1/2 cup M&M's (I used plain, use your favorite flavor or other chopped candy)

Instructions

  1. Preheat oven to 350F. Line an 8-by-8-inch baking pan with aluminum foil, spray with cooking spray; set aside.
  2. In a large mixing bowl add melted butter, the egg, brown sugar, vanilla, and whisk until smooth.
  3. Add the flour and stir until just combined, don't overmix.
  4. Stir in the Oreos.
  5. Turn batter out into prepared pan, smoothing the top lightly with a spatula.
  6. Evenly sprinkle the M&Ms over the top, lightly pressing them down with your finger or a spatula.
  7. Bake for about 20 to 22 minutes, or until done based on add-ins used. Top should be set and edges slightly firm. A toothpick inserted in the center (if you can find a bare patch to test) should come out clean, or with a few moist crumbs, but no batter. Allow bars to cool in pan for at least 30 minutes before slicing and serving. Bars will keep airtight at room temperature for up to 1 week, or in the freezer for up to 6 months.
