Glazed Lemon Sugar Cookies

I love lemon and even better…fresh lemon!  My daughter was wanting to have a lemonade stand the first warm day of spring last weekend and I thought…boy, Lemon cookies sound wonderful right now!  So…off to the store I went to grab up some fresh lemons and these wonderful, chewy, lemony cookies were born!  They are sooo good!!!  Perfect for a warm sunny day and with fresh glass of lemonade

Glazed Lemon Sugar Cookies

Ingredients

  • 1/2 cup salted butter, softened
  • 1/2 cup granulated sugar + an extra 2 tablespoons
  • 1 egg
  • 1 teaspoon vanilla
  • 1 teaspoon lemon extract
  • zest of 1 lemon
  • 1 teaspoon baking powder
  • 1 1/2 cups all purpose flour
  • {for the glaze}
  • 1 cup powdered sugar
  • 1 tablespoon lemon juice

Instructions

  1. Preheat oven to 350 degrees. Line a baking sheet with parchment paper or silicone baking mat and set aside.
  2. Cream butter and 1/2 cup of sugar together in stand mixer until light and fluffy. Stir in egg, vanilla, lemon extract and lemon zest. Scrape sides and mix again. Stir in dry ingredients until just combined. Scoop into prepared sheets and flatten slightly with the bottom of a cup dipped in the remaining 2 tablespoons of sugar. Bake 8-9 minutes, cool 2 minutes and transfer to a cooling rack.
  3. Stir powdered sugar and lemon juice together until smooth. Drizzle over the top of each cookie. After a few minutes, the glaze should dry and you can gobble them up with your fresh glass of lemonade! Enjoy!

Bird Next Cookies

Spring has sprung and Easter is literally right around the corner…my daughter and I made these festive Bird Next Cookies today and I might say, they turned out rather adorable!  We used my childhood favorite No Bake cookie recipe!  After we spooned them onto the wax paper and they started to set just a little, we took a small child spoon and made a little dip in the middle for the eggs to sit!  Our eggs were rather large as we used Whopper Robin Eggs so I suggest using a smaller version of eggs or you could also use Peep Birds instead of eggs!  Once the cookie has cooled a bit you can then put the eggs in!

Bird Next Cookies

Ingredients

  • 2 C. Sugar
  • 1/2 C. Milk
  • 1/2 C. Butter
  • 3/4 C. Peanut Butter
  • 1 tsp. Vanilla
  • 2 C. Quick Oatmeal
  • 3 T. Cocoa

Instructions

  1. Directions: Boil sugar, milk and butter. When it comes to a boil, boil exactly 2 minutes. Add peanut butter, vanilla, oats and cocoa. You can divide the mixture in 1/2 and make them part vanilla and 1/2 chocolate before you add the cocoa if you wish! These do set up fairly fast so try to be quick about putting them by spoonful onto the waxed paper.

When I told my daughter we had to cook these on the stove she told me she was too young to cook!  I told her today is her lucky day…I have promoted her to stove top cooking (with mommy by her side of course)!  She was happy girl!!!

We had so much fun making these adorable cookies and they are even more fun to eat!  Another cute idea…bag a couple up in a ziplock baggie or put some in a festive tin from the dollar store…make a cute tag saying “You’ve Been Egged”…put them on your neighbors doorstep, ring the door and run!
