I LOVE cauliflower!!! I seriously Love it a lot! My husband on the other hand…not so much! He did tell me that he would give it a try (as he is getting sick of the same ol veggies day in and day out)! However, we both Love tator tots so last night..I decided to combine the 2 and give it a whirl! And boy, were they a Hit! With both me and the hubs!!
On the plus side…you can pop these little suckers in your mouth and not feel the guilt you do with a bag of frozen tots…they are baked and not fried!!!
You can chop the cauliflower into fine pieces or use the food processor but only pulse it 3 or 4 times, no more than a few seconds because it can over process very quickly. If you are not sure or think you’ll mess it up, I suggest just chopping it up with a knife real quick.
Next mix all the ingredients in a large bowl, shape them into little tots and bake for 20-25 minutes or until golden brown. Serve with ketchup, eggs, for breakfast, lunch or dinner. They are also great to freeze and pop in the oven for a quick evening meal…without all the prep!
