I LOVE cauliflower!!!  I seriously Love it a lot! My husband on the other hand…not so much!  He did tell me that he would give it a try (as he is getting sick of the same ol veggies day in and day out)!  However, we both Love tator tots so last night..I decided to combine the 2 and give it a whirl!  And boy, were they a Hit!  With both me and the hubs!!

On the plus side…you can pop these little suckers in your mouth and not feel the guilt you do with a bag of frozen tots…they are baked and not fried!!!

You can chop the cauliflower into fine pieces or use the food processor but only pulse it 3 or 4 times, no more than a few seconds because it can over process very quickly. If you are not sure or think you’ll mess it up, I suggest just chopping it up with a knife real quick.

Next mix all the ingredients in a large bowl, shape them into little tots and bake for 20-25 minutes or until golden brown. Serve with ketchup, eggs, for breakfast, lunch or dinner. They are also great to freeze and pop in the oven for a quick evening meal…without all the prep!

Ingredients

  • 2 cups cooked cauliflower florets, finely chopped
  • 1 large egg
  • 1/2 cup onion, minced
  • 3 tbsp minced fresh parsley
  • 1/2 cup reduced fat sharp cheddar cheese, grated
  • 1/2 cup seasoned breadcrumbs
  • salt and pepper to taste
  • cooking spray or olive oil

Instructions

  1. *to cook the cauliflower florets, steam a little over 2 cups raw cauliflower florets in a little water covered for for 4 to 5 minutes or until tender but not mushy, then drain well and dry on paper towel, then using a knife finely chop and set 2 cups aside
  2. Preheat oven to 400°F. Spray a nonstick cookie sheet with cooking spray or drizzle with olive oil
  3. In a medium bowl, combine all of the ingredients and season with salt and pepper to taste
  4. Spoon 1 tablespoon of mixture in your hands and roll into small ovals. Place on the cookie sheet and bake for 16-18 minutes, turning halfway through cooking until golden
