Vegetable Pizza

When I get invited to a party I almost always get the request to bring my Vegetable Pizza!  It’s one of my favorites and always a hit of the party!!!

I also love Halloween and every year have a party to celebrate not only Halloween but my daughters birthday!  It’s my favorite time of year and was ecstatic when my daughter was born so close to may favorite holiday!

As I was preparing for my party and making my vegetable pizza (of course) I was trying to think of how I could make it more Halloween themed and then it dawned on me…little grave stones!  Of course if you aren’t making this for Halloween you just omit the crackers!!  I just bought crackers at the grocery store that resembled grave stones and used sour cream in a pipping bag to write RIP on them!  Super cute and so fun!

Ingredients

  • 2 tubes crescent rolls
  • 2 (8 oz packages) cream cheese, softened
  • 1 pkg (1 oz) dry ranch-style dressing mix
  • 1 cup mayonnaise
  • 1 cup cheddar cheese
  • 1 cup chopped broccoli
  • 1 cup chopped cauliflower
  • 1 cup chopped carrots
  • 1 cup chopped bell pepper (any color)

Instructions

  1. Unroll crescent rolls onto a greased cookie sheet. Press all seams together. Bake at 400 degrees for 10 minutes. Mix cream cheese, mayonnaise and dry ranch mix together and spread of cooled crust. Top with vegetables and cheese. When chilled, cut with pizza cutter and enjoy!

Notes

Tip: I sometimes cut mine after I top it with the cream cheese mixture and then top with all my toppings...that way they don't fall all over and get messy

Frankenstein Finger Cookies

Rainy day here in Iowa on this Beggar’s Night afternoon!  The kiddos and I are bored so decided to see what ingredients we had in the cupboards to see what we could come up with!!!  I have a Frankenstein head decoration that I love (pictured above) so we decided why not make some Frankenstein Finger cookies to go along with it!!  Oh they are so fun!!!

Ingredients

  • 1 cup butter, softened
  • 1 cup powdered sugar
  • 1 egg
  • 1 teaspoon almond extract
  • 1 teaspoon vanilla extract
  • 2 3/4 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/4 cup almond slices
  • 1 tube red decorating gel
  • 1 tube green food coloring

Instructions

  1. Preheat oven to 325 degrees.
  2. Beat together butter, sugar, egg, almond extract and vanilla. Slowly beat in the flour, baking powder and salt. Add drops of green food coloring to dough until you achieve a nice deep green color.
  3. Divide the dough into four equal parts, cover and refrigerate for 30 minutes.. Take one quarter of the dough at a time from the refrigerator. Break off one heaping teaspoonful and roll it into a finger shape. Squeeze in around the middle of the finger to create a knuckle shape. Then, using a butter knife, make indents in several places to resemble a finger. Repeat with rest of dough.
  4. Place cookies on a lightly greased baking sheet and bake for 20 to 25 minutes-let cool. Then, squeeze red decorating gel onto the tip of each finger and gently press an almond sliver on top so the gel oozes out from underneath.
  5. Remove cookies from baking sheets and let them cool on wire racks. Then serve and enjoy
