Lucky Charms Krispy Treats

What a perfect treat for your little leprachauns!  It may not be a big pot of gold at the end of a rainbow…but they sure are a close second!  Lucky Charms is one of those cereals you loved growing up (and if you are like me…still one of your favorites)!  If your kids pick out all the marshmallows out of cereal like mine do…then just add a some ooey gooey melted marshmallows and turn them into a bar..perfect if you ask me!

Ingredients

  • 5 cups Lucky Charms Cereal
  • 1 cup Rice Krispy Cereal
  • 3 Tbls. butter
  • 4 cups (10 oz.) mini marshmallows

Instructions

  1. Grease a 9x13 pan and set aside.
  2. Melt the butter over low to medium heat in a large pot.
  3. Add marshmallows and stir until melted.
  4. Add the Lucky Charms and Rice Krispies and stir until well coated.
  5. Pour into the greased pan. Spray your hands with some non stick spray and press down the mixture evenly.
  6. Let cool, then cut into squares.

Notes

(You can use all Lucky Charms if you like, but adding the Rice Krispies adds a little lightness to the bar so it doesn't become too hard over time) .

Salted Caramel Popcorn

Caramel Popcorn 13 I remember making caramel popcorn at my aunt’s house as a kid and how much of a treat my sisters and I always thought it was. However, I do remember it being a big process but so worth it in the end. Well, maybe it was just because I was a kid with no patience but I decided I really wanted to try this with my kiddos. So glad I did…it’s not a long process at all! So easy in fact I would make it every day of the week…if my waste would allow it! Lol This is something I do not have the willpower to say no too. Needless to say…you will see at the end of my blog post here that after my family and I got our bellies full of caramel popcorn, I bagged it up and distributed it to the neighbors. They were super appreciative!!

Below is how I made mine…scroll down for the recipe!  Enjoy!!!

This is all the ingredients you need!!! Pretty much pantry staples. I even have a big popcorn machine in my basement that I order popcorn from a movie theater popcorn supplier but didn’t even use it! I remembered (since my son is in Cub Scouts) that I had an unlimited supply of microwave popcorn! This is about 4 bags here (Approx. 4 cups per bag = 16 cups).  You can also use an air-popper to make it or even on your stove top!  If you do it this way…use about 1/2 cup of kernels to equal 16 cups.

Mix all the ingredients in a pan and boil for 4 minutes…without stirring!

It really bubbles up…but don’t stir!

Pour boiled mixture over your popcorn and mix well. I did this in 3 shifts. I poured 1/3 of my popcorn in another empty bowl and poured 1/3 of the caramel mixture over the popcorn. Stirred it all around until it was completely coated. Poured the coated popcorn onto a foil (or parchment) lined cookie sheet. Then repeated those steps 2 more times until all my popcorn was coated and spread out evenly on the cookie sheet.  Then you can sprinkle with some more salt.

Now it’s ready to go in the oven. Bake for 30 minutes stirring every 10 minutes.

Oh My Goodness…need I say more! Spread out on a lined counter and break into pieces to cool.

Ready to dig in…WARNING…HIGHLY ADDICTIVE!!

Salted Caramel Popcorn

Ingredients

  • ½ cup unpopped popcorn kernels (about 16 cups popped corn)
  • 1 cup salted butter
  • 1 cup light brown sugar
  • ⅓ cup light corn syrup
  • 1½ - 2 tsp kosher or sea salt, divided

Instructions

  1. Preheat oven to 300°
  2. Line a large baking sheet with foil, parchment paper or a silicone mat. Set aside.
  3. Pop popcorn in microwave, using air popper or stove top and pour into a large bowl.
  4. In a small saucepan melt butter, brown sugar, corn syrup and 1 tsp salt together over medium heat. Bring to boil. Boil for 4 minutes without stirring.
  5. Pour caramel mixture over popcorn and stir to coat evenly.
  6. Pour popcorn into lined pan, sprinkle remaining salt on top (1/2 tsp - 1 tsp depending on your personal taste preference) and place in oven. Bake for 30 minutes, stirring every 10 minutes.
  7. Allow popcorn to cool on a parchment lined counter.

Notes

You can add in 2 cups of nuts to the popcorn before you coat it... if desired! Then coat with caramel.

Granola Bar Bites

I’m always looking for fun and yummy snacks my kiddos will love! Either as an afterschool snack or for taking in their lunches to school! Here’s one that hit the spot…Granola Bar Bites. You can even add or take out ingredients to gear towards what our family love. These little bites are filled with lots of healthy ingredients including peanut butter, raisin,s chia seeds and flaxseed but hidden a bit by some kid approved mini M&M’s, mini marshmallows & rice crispy’s! My kids love them (and mommy does too)!

These are a bit like the Granola Energy Balls I have made so many times…my kiddos love those too but was ready for a little change! Wanted to spice things up a bit if you will!!! I hope you and your family enjoy them as much as we do!

Granola Bar Bites

Ingredients

  • 2 cups rice crispy cereal
  • 2 cups quick oats
  • 1 cup mini marshmallows
  • ½ cup chopped walnuts or nut of your choice
  • ⅓ cup raisins
  • ¼ cup mini M&M's
  • 2 tbsp ground flax seed (optional)
  • 1 heaping tbsp chia seeds
  • 1 tbsp coconut oil (optional)
  • 1 tsp vanilla
  • ½ cup peanut butter
  • ¼ cup honey
  • ¼ cup agave nectar (can substitute honey or karo syrup)
  • Instructions

Instructions

  1. In a large mixing bowl combine, rice crispies, oats, chopped nuts, raisins, ground flax seed, chia seeds, coconut oil and vanilla.
  2. In a microwave safe bowl combine, honey and agave nectar. Microwave for 1 minute 30 seconds
  3. Remove hot honey mixture and stir in Marshmallows until they melt. May need to heat 10-15 more seconds if marshmallow won't completely melt.
  4. Stir peanut butter into honey, marshmallow mixture until well combined
  5. Pour over dry mix and stir until everything is coated evenly
  6. Let rest 2-3 minutes and sprinkle M&M's into mixture.
  7. Using a cookie scoop and plastic bag, form granola mixture into balls. refrigerate or freeze for a couple hours before serving
  8. Keep extras in the fridge or freezer.

Homemade Ice Cream Sandwiches (Healthified)

My family goes crazy for these homemade ice cream sandwiches and truth be told, there isn’t even any trace of ice cream in these scrumptious little fellas! Who knew that if you freeze cool whip…it tastes pretty darn close to ice cream! Throw in a few mini chocolate chips (not too many so you can stay on the healthy side) and dollop that between to graham crackers…stick in the freezer for a few hours and there you have it…homemade & healthy ice cream sandwiches!


Here is what you need:

  • Cool Whip (I get Fat Free)
  • Mini Chocolate Chips
  • Graham Crackers

Dollop a few spoonful’s of cool whip onto a graham cracker square. Sprinkle on a few mini chocolate chips. Top with the other graham cracker square. Ignore my horrible manicure! 🙂

Wrap up- I use Glad Press N’ Seal!

Stick them in the freezer! I make up a bunch, I usually go through the whole container of cool whip as my family gobbles them up fast!!

Once frozen…Enjoy!

Cosmic Brownies (Copy Cat)

My kiddos LOVE Cosmic Brownies.  Every week when I got to the grocery store I throw in a Value size box in my cart!  Whenever possible, I would rather make my kids food homemade..especailly sweets (that way I know what’s all going in them…and I can prounounce everything that goes in them)!

If you LOVE Cosmic Brownies like my kiddos…you have to give these a try!  I am not a huge lover of them out of the box…but these are irresistable!  Maybe it’s the missing perservatives that make them SO yummy!

Ingredients

  • 3/4 cup melted Butter
  • 2 Eggs
  • 1 cup Sugar
  • 2/3 cup Brown Sugar
  • 2 tbsp Water
  • 2 tsp Vanilla
  • 3/4 cup Unsweetened Cocoa Powder
  • 3/4 cup Flour
  • Icing

  • 1 1/2 cup Semi-Sweet Chips
  • 1/2 cup Heavy Cream
  • Candy Sprinkle decorations

Instructions

  1. Preheat oven to 350.
  2. Line a 9×13 pan with parchment paper or aluminum foil and spray with non stick spray.
  3. Combine melted butter, eggs, sugar, brown sugar and vanilla in a large bowl and whisk to combine.
  4. Whisk in the cocoa powder until incorporated.
  5. Add the flour and stir until just incorporated.
  6. Pour batter into prepared pan.
  7. Lightly smooth and level the top.
  8. Bake 25 30 minutes or until toothpick inserted in the center comes out clean.
  9. Allow to cool in pan.
  10. Microwave chocolate chips and cream in a medium bowl for 1 minute
  11. Whisk until smooth.
  12. Pour icing over cooled brownies and lightly smooth.
  13. Refrigerate for 15-30 minutes to allow icing to slightly firm.
  14. Add sprinkles to top and return to refrigerator to finish setting.
  15. When icing is completely set, Slice and serve.

  • Apple
  • Granola (See *Our Favorite Granola Recipe below, use store bought granola, trail mix or make your own with cereal, chopped nuts and chocolate chips)

Instructions

  1. Core and then slice an apple into an even number of thin rings. Spread peanut butter on one side of a slice, then sprinkle with granola, raisins & chocolate chips over it and top with another apple slice. Enjoy!

If you have been looking for a Zucchini Bread recipe…look no further!  Or…if you have never made Zucchini Bread…this will be the recipe you go back to time and time again! It’s not only super simple, it freezes well and can easily be doubled, tripled, quadrupled…to make multiple loaves.

I made mine into muffin form but also makes wonderful loaves or even mini loaves. The streusel topping is amazing (I skipped the nuts and added more chocolate chips) and maybe a little extra streusel.  You can never have too much streusel!  My kiddos chowed these down and never even questioned the little green flecks throughout!

Ingredients

    BROWN SUGAR OAT STREUSEL

  • 2/3 cups old-fashioned or quick oats
  • 1/2 cup light or dark brown sugar
  • 2 Tablespoons all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup unsalted butter, cold
  • 1 Tablespoon semi-sweet chocolate chips (optional)
  • ZUCCHINI BREAD & MUFFINS

  • 1 large egg, beaten
  • 1/2 cup light or dark brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup vegetable oil*
  • 1 cup grated zucchini (about 1 large)
  • 2 teaspoons vanilla extract
  • 1 and 1/2 cups all-purpose flour (careful not to over measure)
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 3/4 cup semi-sweet chocolate chips, optional (or use pecans or walnuts)

Instructions

  1. Preheat oven to 350F degrees. Spray a 9x5 (or 8x4) loaf pan with nonstick spray. If making muffins, preheat oven to 425F degrees and spray a 12-count pan with nonstick spray. Set aside.
  2. Make the streusel first by combining the oats, brown sugar, cinnamon, and flour together in a medium bowl. Cut in the cold butter with two knives or a pasty cutter (preferred) - or you may use your hands. Mix until the streusel resembles coarse crumbs. Stir in the chocolate chips with a spoon. Set aside.
  3. In a medium bowl, whisk together the beaten egg, brown sugar, granulated sugar, oil, zucchini, and vanilla until evenly combined. In a large bowl, toss the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and chocolate chips together. Pour the wet ingredients into the dry ingredients and mix with a large wooden spoon or rubber spatula until combined. Avoid overmixing.
  4. Spread batter into the prepared loaf pan. Bake the bread for 20 minutes at 350F degrees. Remove from the oven and top with the streusel - press it down into the top. The reason you are adding it after 20 minutes is to prevent it from sinking to the bottom of the bread as it bakes. Return to the oven and bake for an additional 25-30 minutes or until a toothpick inserted in the center comes out clean. I covered the bread loosely with aluminum foil after 35 total minutes to avoid the top from getting too brown. Allow bread to cool in the pan set on a wire rack for at least 1 hour before removing from the pan and serving.
  5. If making muffins, fill 9-10 muffin cups all the way to the top. Press the streusel into the tops of each muffin. Bake for 5 minutes at 425F degrees and, keeping the muffins in the oven, lower the oven temperature to 350F degrees and continue to bake for an additional 13-14 minutes or until a toothpick inserted in the middle comes out clean. Allow to cool in the pan for 5 minutes before serving.
  6. Bread and muffins stay covered tightly at room temperature or refrigerator for up to 5 days. Bread and muffins freeze well for up to 3 months. Recipes may easily be doubled, tripled, etc and baked in batches.

Notes

*Instead of vegetable oil, you may use canola oil or melted coconut oil. I find the recipe tastes best with vegetable oil. *Healthy bonus: I tried swapping half of the oil with applesauce and didn't notice much of a difference as far as taste and texture goes! However, to avoid a rubbery texture, I would not swap any more than half of the oil for applesauce.

Skinny Chocolate Chip Muffins So I found out from my neighbor that my daughter Loves banana muffins!  How I found out..my neighbor texted me one night wanting to know if my daughter ate her dinner that evening? She continued to tell me that she had made some banana muffins and my daughter consumed approximately…107 of them!  lol  First off…my daughter does not eat fruit!  No idea why…she loves her veggies (which is odd for a 5 year old) but she will eat carrots and raw spinach like it’s going out of style.  What a perfect way to sneak in some fruit!  I added some yummy mini chocolate chips (to tantalize my other kiddos to eat them…I have super Picky kids)!  I also healthified the recipe a bit for those of you (like me) watching your waste line!  These are perfect for breakfast or quick snack on the go…awesome with a hot cup of coffee or cold glass of milk!  Even better…they freeze well, for those of you with portion control issues (again, like me)! 🙂  Enjoy!

Skinny Chocolate Chip Banana Muffins

Ingredients

  • 2 Tbsp honey
  • 1/4 cup sugar or agave nectar (sweetner)
  • 1 large egg
  • 1 tsp vanilla extract
  • 3 large bananas, mashed
  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp kosher salt
  • 6 oz Vanilla Greek Yogurt
  • 1/2 cup mini semi-sweet chocolate morsels

Instructions

  1. In a large mixing bowl, beat honey, sugar or agave nectar, egg, vanilla and banana until blended. Add flours, baking powder, baking soda, salt, and yogurt. Beat for 1-2 minutes until fully combined. Fold in chocolate morsels.
  2. Grease cupcake tin with nonstick baking spray. Spoon batter into each tin (about 1/4 cup). Bake in a 350 degree F oven for 18-20 minutes. For mini muffins, bake 11-13 minutes (Makes approx. 36 mini muffins). Remove and cool on wire rack. Store in an airtight container for up to 5 days or freeze for later use. ENJOY.

Reese’s Pretzel Bites

Who doesn’t love chocolate, peanut butter and pretzels…I personally LOVE it! This is the perfect combination of all of the above! I made these for my son’s 9th birthday party and they disappeared before everyone arrived for the party!  Huge hit!

Ingredients

  • Pretzels
  • Mini Resse's Peanut Butter Cups
  • Sprinkles

Instructions

  1. Line up a bunch (technical term) of mini pretzels on a parchment/wax paper lined cookie sheet
  2. Top with a mini Reese's peanut butter cup (or chocolate of choice ~ Rolo's or Hershey Kisses would be good too)
  3. Bake in a 170 degree oven for 4.5 minutes (6 minutes if you're doing Hershey Kisses)
  4. Immediately top with second mini pretzel & top with sprinkles
  5. Pop in the freezer until set
